Focaccia alla Barese is one of the most characteristic varieties of focaccia, originating from the Puglia region, more specifically from Bari. It is distinguished by its fluffy interior, crispy skin and moist flesh, which it owes to the addition of olive oil. Baked in a traditional way, it is characterized by an intense aroma and deep taste, emphasized by simple but excellent quality ingredients. NOTE: unlike the classic Focaccia Barese, we do not add boiled potatoes to the dough – hence the name Focaccia ALLA BARESE.
In this variation, Kalamata olives are added to the classic Focaccia alla Barese, which enriches the taste of the baked product with a distinct, slightly salty note. The combination of olives, tomatoes, salt and rosemary makes every bite of this focaccia a real trip to sunny Puglia.
